I think we can use SKU number and have a append/prepend field where we can put or use a series of values.
Category sound good to me.
We can have a category size (S, M, L, XL) or colour (White, Black, Red, Blue) and have an SKU field with an id then the attached category.
IE (based on category above):
SKU-Category(size) = 12345-S
