When the "Show user's real name instead of login in autocomplete selector in trackers feature" is on, the selector provides real names or "cleaned/obscured" email addresses to choose from (if use email as username is on).
This is fine, since this is the purpose of this feature.
However, once saved, the next time the item is edited the value shows as the email address, which stays there. But if you click on the field or tab through it it disappears, which is a problem.
Temporary workarounds: Make sure you don't click or tab through it, put the field near the end of the form, make sure this only shows for admins and not for normal users.
Longer term solution: Unfortunately we can't simply show the real name instead of the login (using the username smarty modifier), because different people could have the same real name. We could create a new smarty modifier to show the full unambiguated name here though, e.g. "Peter Thomas (peter.thomas@gmail.com)". That would be what the user would be selecting anyway.
